Ganache is a base ingredient used in most all chocolate pastry and cake. If making fine chocolate candies you can substitute cream for the milk and butter.

Ingredients Required: Ganache
Preparation Instructions: Ganache
| Place chocolate chips into a mixing bowl. |
| Melt butter then add milk and bring to a rolling
boil. |
| Pour boiling milk over the chocolate chips. |
| Mix slowly for 3 to 5 minutes until smooth. Do not
mix fast or incorporate air bubbles. |
| Pour through a strainer into a suitable storage
container. Store under refrigeration. |

Ganache can be used cold, warm or hot. Reheat in
the microwave for a few seconds at a time, or over a pan of boiling
