This small shell is filled with cold vanilla pastry cream then topped with a mound of blueberries. A coating of apricot glaze keeps it all together.

| Using a small spatula spread pastry cream into bottom
of shell. |
| Place one and a half layers of berries onto each
tart shell. |
| Glaze with apricot glaze using a small pastry brush. |
| Store chilled |
| Frozen blueberries were used in the photo and will
work fine if fresh are out of season. |
